Simple, easy and not time-consuming to make, this is such a delightful treat for adults, children and great for parties!
Through experimenting with different Vegan recipes I found the perfect recipe. The coconut milk was the sweet, savoury main ingredient that was perfect for the ice lollies and the other flavours are so complimentary! The coconut, mixed with strawberries and maple freezes to a mouth-watering consistency that will leave you begging for more, 8 just simply isn’t enough!
Not to be a bad influence, but with the Vegan Ice Lollies recipe that I’ve listed below you should definitely make more than 8. A lot of the ingredients below are purchasable in bulk so if that’s not an excuse to make more, then I don’t know what is!
Vegan Ice Lollies Recipe:
Prep time: 15 minutes to prepare, plus freezing time
For this Vegan Ice Lollies recipe, all you need are the following ingredients:
Ingredients for the Vegan Ice Lollies
- 420ml coconut milk
- 50-60ml maple syrup
- 1 tablespoon vanilla extract
- 160-180g hulled strawberries
Note that you can make these with any fruit, but I found strawberries to be the best consistency, sweetest and overall most scrumptious choice!
Instructions: How to make the Vegan Ice Lollies Recipe:
- Put the coconut milk, maple syrup, strawberries and vanilla in a blender (can also be hand-blended) until smooth
- Divide the mixture between your ice lolly moulds and insert the lolly sticks
- Freeze for 4-5 hours for best results
- To remove the lollies safely from the moulds, run the moulds under warm water briefly and twist/ gently pull.
TIP – If you want quicker results with your freezing, surround the moulds with other already frozen goods so that the ice lollies chill much quicker. If done right, the Vegan Ice Lollies should be ready within 2 hours, perfect for that extra-hot summer day! Another great tip to note is that whilst blending, if you find it’s a little too thick to blend you can always add a little extra coconut milk to smooth it out.
